Another Harvest Feast come and gone. I think we’re up to something like # 27 or something. And I have to say this was one of the most organized ones for the kitchen I’ve ever been a part of. The chef [Paul, husband of Jay-Cee] who does this for real in RL, was incredible. He hit the door at 1200 and despite having to work around things like the ovens being a bit too small, etc. The first remove hit the tables at 5:45 [15 minutes past schedule on the day’s events] and the last food went out no later than 7:30 at the latest. I lost track of time because we were flying. So far as actual bodies in the kitchen doing food, it varied between two of us and four of us, but never more than that. Paul had things so well pre-prepped and did the whole ‘wing it’ bit so well it took very few people to get things done. A four remove multi culture meal for 150 with the dessert remove dessert contest in honor of Baron Micheil. I missed out on tasting the winner – a truly awesome looking raspberry triffle, but what I was able to snag was top caliber.

The contract said we had to be out NLT 1 AM. We were well into clean-up by 9 PM and I left with the last folks out the door around 10:30.

So… how many times does the entire thing wrap over 2 hours before we have to be out? And that’s counting a last minute Royal Court @ 12 noon added to the schedule.

More, perhaps, later. After I get my feet to uncramp.
